If you do not tell the admissions director, he or she will never know that an interviewer is not behaving appropriately. It is important that you speak up before a decision had been made on your application, as decisions are often final. After you have been waitlisted or rejected, your concerns may seem less valid. Let the admissions director know about your concerns prior to leaving on interview day. Once you leave, there may not be anything that can be done to help you or to rectify the situation.
